Dominican Mother's Day

My trusty campaign right hand, Ingrid Ardaya reminds me it is Dominican Mother's Day on May 28. For those with moms back home here's a website to send that special some one flowers:

For those whose moms are young or young at heart, some might appreciate musica de Merengue or maybe a little more casual Bachata. Just don't bring home Juan Luis Guerra, and Johnny Ventura because dad might not understand!

Those who really want to give mom a treat can let her relax and prepare some Sancocho. A recipe is below. What ever you do... enjoy!

Ingredients:

  • 4LB fresh pork chops(cut into pieces)
  • 3LB fried chicken(cut into pieces)
  • 2LB potatoes
  • 1/2LBwhite yautia
  • 1/2LB yellow yautia
  • 1LB auyama
  • 2LB mapuye
  • 2LB name
  • 4 corn(halved)
  • 2 green pepper(chopped)
  • 2 large onion(sliced)
  • 4 cloves garlic(crushed)
  • 4 green plantains
  • 4 ciantrico(vegetable)
  • 4 cilantro leaves(vegetable)
  • 5 tablespoons oil
  • 1 teaspoon oregano
  • 1/2 teaspoon spice
  • 3 tablespoons vinegar

Directions:

Marinate the meat for a few hours with all the ingredients. Sauté meat in the oil. Dice vegetables. Stir with the meat. Add some water and cook until the soup thickens. Put in some salt and vinegar or the squeezed orange juice. If any kind of vegetables are not available, try whatever’s available.
